Take advantage of having the essentials on hand, and try some of these fresh summer recipes at the cabin!<\/p>\n<p><strong>Tuna Spring Rolls with Pineapple Dipping Sauce | myrecipes.com | serves 2 <\/strong><br \/>\n<em>Ingredients<\/em><\/p>\n<ul>\n<li>\u00bc cup pineapple preserves<\/li>\n<li>2 teaspoons rice vinegar<\/li>\n<li>\u00bd teaspoon fish sauce<\/li>\n<li>\u00bd teaspoon reduced-sodium soy sauce<\/li>\n<li>2 teaspoons toasted sesame oil<\/li>\n<li>1 (8 oz) tuna steak<\/li>\n<li>\u00bc teaspoon kosher salt<\/li>\n<li>4 (8-inch) round rice paper wrappers<\/li>\n<li>\u00bd ripe avocado, peeled and cut into slices<\/li>\n<li>1 cup thinly sliced carrot<\/li>\n<li>\u00bd cup thinly sliced English cucumber<\/li>\n<\/ul>\n<p><em>Directions<\/em><br \/>\nCombine first 4 ingredients in a microwave-safe bowl; microwave at high 45 seconds or until smooth.<\/p>\n<p>Heat a medium skillet over high heat. Add oil to pan; swirl to coat. Add tuna to pan; cook 2 minutes on each side for medium-rare. Place tuna on a cutting board. Let stand 5 minutes. Cut across the grain into thin slices; sprinkle with salt.<\/p>\n<p>Add warm water to a large shallow dish to a depth of 1 inch. Place 1 rice paper sheet in dish; let stand 30 seconds. Place rice paper sheet on a dry kitchen towel. Place \u00bc of tuna on bottom third of sheet, leaving a 2-inch border. Top with 2 avocado slices, \u00bc cup carrot, and 2 tablespoons cucumber.<\/p>\n<p>Fold bottom of sheet over filling. Fold sides of sheet over filling; roll up, jelly-roll fashion. Gently press seam to seal. Place roll, seam side down, on a serving platter. Repeat procedure with remaining wrappers, tuna, avocado, carrots, and cucumber. Add almonds and chicken; toss to combine. Combine oil, rind, juice, salt and pepper in a small bowl, stirring with a whisk. Add oil mixture to watermelon mixture; toss gently to coat.<\/p>\n<p><strong>Chicken Souvlaki with Tzatziki | myrecipes.com | serves 6 to 8 <\/strong><br \/>\n<em>Ingredients<\/em><\/p>\n<ul>\n<li>2 lbs boned, skinned chicken breasts, cut into 1 \u00bd-in cubes<\/li>\n<li>\u00bc cup olive oil<\/li>\n<li>\u00bc dry white wine<\/li>\n<li>2 tablespoons lemon juice<\/li>\n<li>2 teaspoons chopped fresh oregano leaves<\/li>\n<li>4 garlic cloves (2 crushed, 2 minced)<\/li>\n<li>1 teaspoon kosher salt<\/li>\n<li>\u00bd teaspoon pepper, divided<\/li>\n<li>\u00bd English cucumber, coarsely shredded<\/li>\n<li>14 oz nonfat Greek yogurt<\/li>\n<li>2 teaspoons distilled white vinegar<\/li>\n<\/ul>\n<p><em>Directions<\/em><\/p>\n<p>Heat grill to high (450 \u2013 550 degrees F).
